The weather is finally getting better here in UK and this is one of the lunches from a few days ago. Super quick meal with beautiful flavours of basil and oven roasted butternut squash, this can be prepared in 15 minutes with the simplest ingredients! These oat bites are super simple to make and absolutely delicious! With nutrition from oats and chia seeds and beautifully sweet strawberries, these bites are perfect for breakfast or a quick snack ! I was born and brought up in the city of Chennai .. you may know it as Madras, most commonly from the term “Madras curry”. We have a traditional dish called Lemon rice. The flavour of the dish mostly comes from the tempering – there’s mustard seeds, lentils, curry leaves, chillies etc. Tara loves the idea of lemon rice but fried lentils bother her. Summer holidays are here and Tara asks for 3572746293 snacks a day! So Im sticking to simple and bae-sic ones, like these cheesy bun fingers ! It takes 5 minutes to prepare! Usually the first few snacks a day are exotic but by evening I’m exhausted and make something very simple like this ! All you need are: 1. Soft buns. I use brioche buns. 2. Grated cheese 3. This is absolutely delicious, guys ! Super easy to make, full of greens, cheese baked until golden – it’s the perfect comfort food in a bowl ! This pasta tastes absolutely fab when baked for 5 minutes covered with a foil and 5 minutes without the foil for the cheese to get that beautiful golden colour. I have tried many different versions of pasta and this one is my favourite. It’s creamy (although there’s no cream), has 3 vegetables, so cheesy and so delicious. I absolutely loved how this came out ! Properly seasoned, crunchy bits of corn and beautifully crispy garlic, this bread is perfect for summer meal as a main or side with the family. Tara loves to use a pizza cutter so she cut it into triangles and had it. The dough is a basic two ingredients dough: 2 parts flour and 1 part yoghurt. This paneer curry is Tara’s favourite and is full of flavours. It goes really well with rice or chapati. I started to make a simple tomato and onion curry but I had some extra paneer that needed using up so added it and it tasted yum. Tara polished off the curry and totally ignored the quinoa Khichdi that I’d made. If you’re on a vegan lifestyle, simply replace paneer with tofu and it tastes delicious! This is probably the biggest hit sort of dish with all of us! Super simple to make, loaded with 6 vegetables and perfect for a summer lunch in the garden !
