Once again, my Jewish-Iraqi origin plays a role in this recipe. Blacked eyed peas, or “Lubia” as I know them are the closest thing to magic beans. We sow them in our backyard every year in April. It takes only a few days for them to sprout out of the earth strong and green. We all watch them grew slowly until one day the little plant grows long and wind. This is the pastry I grew upon. Usually made for Purim (a Jewish holiday) by Jewish Iraqis (that now leave in Israel). My grandmother made it occasionally and I love them. A great advantage of the Ba’ba Ta’mar pastry – If you didn’t eat all of them right away you can freeze them. Coffee break? Stuffed Onions with Rice and Lamb in Pomegranate Juice

I’ve made this dish out of  a sweet memory recreating a meal I have ate 15 years ago. It’s of Syrian origins, made by a friend’s mom which makes, to my opinion the best stuffed onions, they even make their own fresh pomegranate molasses at home (I bought mine). The deal with dill is that it is one of those herbs that takes over the dish, so give him the stage.
