I think we have skipped Fall and went straight to Winter.  It has gotten chilly fast, and I can’t believe I am typing this because I have cooked ribs in a snow storm…but it was too cold to be outside today.  My body has not become acclimated to the sudden cold. Therefore, since I am a wimp today, and feel like staying indoors, we are going to make breakfast for dinner.  Plus, since I grew up on a farm, I am going to dedicate the next few posts to country cooking.  Which means, they will be high in bacon grease and lard and will be cooked in cast iron.  Just to warn you! My wife recently told me about a person who was using an app that would let them link their credit card, and in turn, automatically receive a percentage back from participating retailers whenever they used the linked card to pay.  This person was using the app at Sam’s Club to buy already discounted Disney gift cards , then getting 10% of their spend deposited into his account within the app.  His purpose was to use for a Disney vacation.  Pretty smart.  However, in my world, it would be great to buy beef, chicken, even buns and condiments with a 10% discount. The Background I volunteered to cook ribs for the grounds crew at my church picnic five years ago. I had a Weber, which was fine for burgers and cooking hot, fast foods. However, if I wanted a low and slow cook, it was a pain! The charcoal would burn out quick, the grill temperature was difficult to hold constant, and the main issue, in my opinion, was that food was dry, not tender and moist. It was decided right in the middle of my rib cook…I needed a komado grill such as the Big Green Egg or Komado Joe.
