I’ve been having a good time experimenting with whole grain flours from Pereg Foods to make baked goods and dishes reminiscent of my childhood. These waffles were a success that made me feel very nostalgic. Whole grain flours, legumes, and ancient grains are something I grew up eating regularly and cooked with a lot early in my career. Lately I have been working with them again as I reincorporate some traditional foods back into my repertoire. You all know I love a good cooking challenge so when New York Beef council invited me to create a recipe with a mystery cut of beef I couldn’t resist. Surprise, they sent me a beautiful, aged tri-tip roast. It’s a great cut that I haven’t worked with in a long time. This recipe is inspired by one of my husband’s favorite dishes. In Montenegro, his mother made this with tiny peppers from their garden and homemade feta cheese that was beginning to dry out.
