We are continuing our tour of the Thai Traditional Kitchen from Part II. This week, I will introduce you to a unique piece of kitchen furniture you might find in a Thai Traditional Kitchen. This item is used to keep flies and insects away from food and to store cooked meals at room temperature, when microwaves and refrigerators weren’t around. Can you guess what is it? The kitchen object that we are going to explore today is the Thai Traditional Food cupboard (Thai:ตู้กับข้าว). Mango season is here! I think it’s the best time to share with you the famous Thai dessert ‘Mango sticky rice’ aka in Thai as Kow neiw ma moong. The dish consists of sweet sticky rice and mango, topped with salted coconut cream and sprinkled with sesame seeds. The reason I want to share this with you now is that mango is in season in Australia, and for this dish it is best to use fresh mango rather than mango from the can. This dessert is so easy to make and requires few ingredients, all of which I’m sure you will be familiar with. I’ll also add that this is one of my favourite desserts, s ..read more

Figure 1 A Thai-style kitchen with well ventilation. This kitchen looks similar to my grandma’s kitchen (Image retrieved from https://www.baanlaesuan.com/49044/ideas/thai-house) It is unarguable to say that the kitchen is the one of the most important places in every home. It is one of the highest traffic areas in the house with lots of activity happening every day. The kitchen is not only a place for preparing food, but it is used as a dining area, learning practical life for toddlers and even a little social hub where everyone in the family has a quick catch up.  With the new design ..read more

If you were to ask me what Thai dish brings me back to my childhood, the one dish that comes to mind is for Kao Tom a.k.a. Thai Rice Soup. My uncle always cooked my grandmother’s recipe for Kao Tom at our family reunions. This delicious dish was always guaranteed to be every generation favourite dish. My uncle would make a ginormous pot to ensure that there was enough for everyone. He woke me and my cousins up early in the morning to help prepare ingredients and it was also a good chance for us to catch up and see how everyone going. Pumpkin, also known as Fak tong in Thai, is a very common vegetable in Thailand. Thais use pumpkins for both savory and dessert dishes - Charinya Ruecha of @charinyas_kitchen Pumpkin, also known as Fak tong in Thai, is a very common vegetable in Thailand. Thais use pumpkins for both savory and dessert dishes. I have posted a savory dish recipe using pumpkin before, so I think this time we should do a dessert dish. As you may already know, in Thai Kanom means “dessert” or “snack”, and just like in English Thai speakers combine words leading to the dish we will cook here, Kanom fak th ..read more

Copyright 2021 Parita Nobthai All Right Reserved Father’s Day is approaching which is over a week away. This year some of us will again be celebrating this special day in lockdown away from our dad’s. I have been thinking of my dad’s favourite fish, which is salted mackerel fish. He is always raving about this fish and often visits local markets or stops by street kiosks on the way to Bangkok to purchase it. He usually has fried salted fish with fresh sliced shallots, chopped birds-eye chilli, lime juice and steamed jasmine rice.  I have no clue as to why my dad raves about salted fis ..read more

This dish is among my favourites and my go to khao rat kaeng dish - Charinya Ruecha of @charinyas_kitchen This dish is among my favourites and my go to khao rat kaeng dish. In saying that, I don't cook this dish often as the core ingredient for the dish is ginger and it's quite expensive here. Recently I saw ginger at the supermarket for $50 a kilo! Fortunately, my friend who grows ginger in her garden gave me heaps of ginger. Of course, the first dish that came into my head is Gai pad khing aka stir-fried chicken with ginger. There are so many different grilled chicken (Kai Yang) recipes, but this one is simple, so tender and  will be among your favourites from now on! - Charinya Ruecha of @charinyas_kitchen The (not so) secret ingredient is coconut cream. This ingredient helps to tenderise the chicken, giving it a succulent texture. You can further enhance the aroma of the grilled chicken by adding lemongrass and shallots. But coconut cream is only half the story. To elevate this dish to a higher level you need to draw on magic of marinating the chicken in the fridge overnight. Of course, this means t ..read more
