Marnie Nichols February 12, 2022 Just for fun, Man Champs, Top Fives You and I don’t need any excuse to indulge in champagne but apparently, a lot of people reserve champagne for special or romantic occasions. Like St Valentine’s Day, the most romantic day of the year… after you take out the commercialisation, sense of obligation, and sheer dread most men feel about forgetting or getting it wrong. #imnotcynical. And while I have been writing Bubble & Flute for five years now – that’s five St V’s days – I still haven’t been able to bring myself to write a predictable list of romantic ..read more

My Top Five Special Occasion Champagnes

Marnie Nichols February 10, 2022 All Time Favourites, Blog, Top Fives “Always keep a bottle of champagne in the fridge for special occasions. Sometimes, the special occasion is that you have a bottle of champagne in the fridge.” Hestor Browne Special occasions champagnes The hardest part of writing this special occasion champagnes list was working out what exactly is special? I worked out my definition of what makes a “special” occasion is pretty loose. And the quote above from Hestor Browne does a pretty good job of summing it up. I usually just decide that I deserve it (and of co ..read more

Top Five Summer Champagnes
Bubble and Flute Blog

I live on the Gold Coast in Queensland, Australia, where it is summer about 6 months of the year… lucky me! It is a great climate but, particularly in February, it can be really humid and your champagne almost boils or evaporates in your glass after just a few minutes in the sun.   But because of our long, hot summer, this was an easy post to write because I’ve had plenty of practice drinking summer champagnes to put this list together.  I know it’s not summer everywhere but there is a champagne for every season and occasion so if it’s not summer where you are right now make s ..read more

An introduction to low and no-alcohol bubbly

Marnie Nichols January 29, 2022 Blog In my My Top Five Champagne Predictions for 2022 one of the trends I flagged was the rise in popularity of low and no-alcohol bubbly. Five years ago, when I started Bubble & Flute, if you asked me to try a low or no-alcohol sparkling wine, I would have thought you’d gone mad. But now, five years later, I am – of course – five years older and am finding I feel the effects of alcohol more… poor sleep, dehydration, and just feeling fuzzy or slow the next day, even after just a few glasses. As the kind of person who likes to seize the day, live life t ..read more

Produced in small quantities and only in exceptional years, the Ayala Blanc de Blancs expresses the unique terroir we know and love from Chardonnay from the Côte des Blancs. All of the Ayala champagnes are chardonnay driven and would make great beach champagnes – read about my visit to Ayala here which includes links to my champagne chat for all their wines. Ayala Blanc de Blancs 2010 Tasting Notes You can find the Ayala wines from Champagne Gallery or Emperor with the 2014 Blanc de Blancs retailing for about $130. Marnie Nichols January 16, 2022 Bubbles Bible Moët & Chandon Brut Impérial NV There is little doubt in my mind that Moët & Chandon is the most recognised champagne brand on the planet and arguably no other brand has done more to pioneer using champagne for celebration.  Moët goes so far as to credit Jean-Remy Moët, grandson of founder Claude Moët, as being the man who introduced champagne to the world and this quote about Jean-Remy Moët says it all… “Much like his champagnes, when Monsieur Moët enters the room, boredom disappears.”  Moët & Chandon produces more champ ..read more

Marnie Nichols January 16, 2022 Blog, Top Fives 2021 was another tumultuous year for the champagne region and humanity in general.   Champagne continued to face the realities of climate change with a difficult harvest season and year-round impacts from COVID on productivity, tourism, supply chains and demand for champagne as the world came in and out of lockdowns and isolation. What 2022 holds for us is anyone’s guess so I have pulled out my crystal ball and gazed deeply into it to come up with my top champagne predictions for 2022. As well as calling on the power of my crystal ..read more

G.H. Mumm Cordon Rouge

Marnie Nichols January 16, 2022 Bubbles Bible The Mumm Cordon Rouge is one of all-time favourite champagnes. It is a simple and enjoyable champagne that, in my experience, everyone seems to like. Its fruit-driven flavours, freshness, and easy-drinking are its hallmarks.  In Australia, we drink a lot of Mumm. In fact, we are the single biggest market for the house anywhere in the world so there is something about this champagne that resonates with us.  For value, availability and drinkability, I really can’t go past the Cordon Rouge. You can usually buy Mumm Cordon Rouge for aro ..read more

Marnie Nichols January 16, 2022 Bubbles Bible The Piper-Heidsieck champagne style is very distinct that is driven by pinot noir, marrying the structure of the pinot noir, with the fruits of the meunier, the elegance of the chardonnay, and the timeless flavours of the reserve wines.  Piper-Heidsieck is one of the few ‘big’ champagne brands whose Cuvée Brut has remained at or under the $50 mark over the last few years, in part due to the house introducing a new cuvée, the Essentiel Brut Champagne that competes in the $70 – $80 range.    Piper-Heidsieck Cuvée Brut Tasti ..read more

Marnie Nichols January 15, 2022 Uncategorized My first tasting of Champagne Jacquart was at New York Champagne Week in 2017, the day after I ran my first (and so far only) marathon. I considered it my reward for 42 kilometres of hell… and while I haven’t pumped out another marathon yet, I have popped quite a few more bottles of Jacquart since.  In fact, since that first tasting, I have regularly used the Champagne Jacquart Brut Mosaïque in my tasting events because it is so approachable and enjoyable.   To show just how enjoyable this wine is, I shared a taste of ..read more
