If someone said to me “I’ll pay you one million dollars to tell me your one favorite ethnic food” I’d be hard-pressed to answer, because I have two favorites — Italian and Greek. If you haven’t gotten on the quinoa bandwagon yet, this might be a good time to give it a try. I haven’t had time to fish lately, so I’ve been living vicariously through friends, some of whom have been catching Tripletail. These fish like to hang out under crab floats, in weed patches and under structures.  They resemble Flounder because of their mottled brown and cream coloring, and the fact that they swim and float on their side.  Here’s one I caught oh-so-long ago: The name is attributed to their elongated dorsal and caudal (bottom) fins, which make them look like they have three tails.  You can always tell when folks are searching for them – their boats slowly ..read more

You might remember the recent Field Trip Friday I wrote about my visit to Westport, Massachusetts, in which I referenced an awesome day searching for quahogs, clams and mussels.  A great way to spend the day, digging in the muddy banks of a beautiful body of water and pulling out something awesome, like these mussels: Here we are, with our fabulous finds.  As you can imagine, we were all pretty happy: Mussels are low in fat and calories, a great source of Omega-3 fat, high in protein, with lots of other good stuff, so unless you have a shellfish allergy, you should be eating these ..read more

I recently hosted a workshop called “The Amazing Mullet” at Historic Spanish Point in Osprey, Florida.  The organization is all about preserving and celebrating Florida’s past, and this was part of a learning series called the Frances Newton Culinary Institute, highlighting dishes using seasonal fish and produce.
