While my daughter and I cook our way through the world alphabetically, we’ve definitely found some country’s cuisine easier to replicate than others. It’s a challenge to source certain ingredients, and since my girl is a vegetarian we’ve been trying to come up with a bunch of things she actually might want to eat. My daughter and I chose to make a traditional peanut soup in honor of Burkina Faso, the next stop on our 2021 International food cooking challenge. I made a similar soup several years ago (when my kids were young and would eat almost anything!) so I was somewhat familiar with the flavor profile. There are many variations of this soup, but all are similar in that they include loads of vegetables along with spices and peanut butter. The latter adds both flavor and body to the soup. Next up on our mother/daughter tour of International cuisine? Bulgaria. After a savory dish and cocktail during our visit to Brazil, my daughter thought we should try our hand at something sweet. I don’t tend to think of pumpkin recipes beyond fall; this traditional strudel, however, had winter comfort food written all over it! What’s the Super Bowl without salsa, right? The event is the perfect excuse for chip and dip consumption; while we aren’t football fans per se we never miss the big game (or the food!). My love of Belgian waffles dates back to childhood; the highlight of our visit to a local restaurant for their Mother’s Day brunch buffet was definitely the Belgian waffle station. The waffles were fluffy perfection, and you could ask for them topped with all sorts of sweet goodness. Added bonus? The very cute teenage boy who made them! For week three of our 2021 International cooking challenge, my daughter and I traveled to Australia. My teenage daughter and I were chatting about resolutions shortly before New Year’s Eve. We both agreed that they’re really only a good idea if they come in the form of promises.
