After nearly two months of eating a plant-based diet I thought I would share my favourite vegan breakfast recipes so far. I’ve really enjoyed trying different recipes but it hasn’t always gone well. I tried quite a few vegan pancake recipes that really didn’t work! I had a particular disaster making vegan ‘crepes’ that I just couldn’t flip as they would break and stick to the pan. I’m a chocoholic and this is torture! I’m writing about these brownies without having one to eat at this moment in time. I would be the happiest person on earth if I could make them again and again to have a constant supply. These chocolate and raspberry brownies taste amazing! They are moist, squidgy, indulgent but in my opinion perfectly balanced: sweet, but not too sweet, with the juicy summer raspberries adding some freshness.   Just over a month to go and we will be changing seasons! This week we had some nice sunny days that made me long for Spring. I’m looking forward to going outside without hunting down everyone’s hat, scarves and gloves. The gloves are the worst, we have lost so many the kids have had to wear odd gloves on our last couple of outings! These are the easiest cookies ever as you only need three ingredients; Oats, Banana and chocolate chips. You could even make them for babies from 6 months old, just omit the chocolate chips. I made these chocolate chip cookies again the other day (with the help of my two year old) , as I quickly needed to prepare a after school snack as my daughter had friends coming over to play. I still get surprised at how regularly my kids need a little snack. As they are so active, I find their energy levels can drop really quickly. One minute they seem fine and suddenly I’ll have a screaming toddler, who will not listen and give me no clue as to what is wrong. With time, I’ve become better at working out they may need a small snack. My boy is especially grumpy when he gets hungry (It must come from me!).
