This roasted miso aubergine (aka eggplant for my American friends) is soft, sticky and honestly the best one I’ve made so far.
The secret to good aubergine is to properly roast it. It’s not a quick deal, it needs to stay in the heat for some time to become truly melt-y and delicious. Ever had rubbery ones? Probably didn’t have enough time to cook!
This aubergine miso recipe serves 2, but can easily be doubled or tripled depending on how many people you’re cooking for – or even if you’re meal prepping and want to have it on hand for weeknight dinners.

I was at the EUFIC event in Belgium a couple weeks ago for their Food Unfolded #EatingTheGap event, and the theme was food sustainability and nutrition.
There is a lot of buzz in the media about plant based and vegan diets and their impact on the environment, but what about people who aren’t vegan? No matter your diet, there are steps you can take to increase your own food sustainability. We use 40% of our land for food, and 70% of our water – and yet we’re throwing away 1/3 of it all! The shops have been singing with fresh peaches, and, considering it’s one of my favourite fruits, I’m singing with them.
I love just simply snacking on a fresh peach, but thought I’d do something a bit different this time around – vegan waffles. Oh, and we’re also adding some blackberries for extra punch.
These vegan waffles are:
Full of fibre
Bursting with delicious fruit
Low in added sugar
Perfect re-heated the next day

I’d like to introduce you to my favourite creamy kale caesar salad.
This caesar salad is a staple in my home. We make different variations every week, but this is one that keeps getting requested time and time again. It’s:
the healthier, homemade version
full of nutrition and nourishment!
taste freakin’ delicious
perfect for tossing together when you have guests for dinner
I lightly steamed the kale a bit as I prefer mine softer, then added some chickpeas and the croutons, which are just chopped up pieces of sourdough with some minced garlic and olive oil roasted in the oven till crispy.

Savory Paleo Pancakes were a very unexpected addiction to my morning.
I made them for breakfast and wasn’t expecting much to be honest, but they might just be joining my team of favourite breakfast for when I’m not in the mood for something sweet – not common, but happens.
They’re basically a substitute for toast, and carry the avocado and egg perfectly!
