2020 ended so much better than it began. After acclimatizing ourselves to a new reality of sitting in our cardboard-box sized campus apartments, our universe restricted to campus boundaries, we had somehow made it through an exhausting, boring and yet emotionally challenging year. This story has a happy ending, I promise. But back then, it was hard to see the light at the end of the tunnel. What had happened was beyond my heart’s comprehension, beyond anything I thought I could come to terms with. Udai Kothi is a family owned boutique hotel in Udaipur, located right on Lake Pichola – a location as prime as it gets. I didn’t want to face the unresolved emotions that were waiting for me beyond the grief that I already felt – so I decided to tell the story in a factual narrative instead. I rarely post recipes (in fact, this might be the very first!) but since I posted a picture of my mom’s home-made vegan cake, my Instagram blew up with requests for this recipe. So I’m sharing it here for you. She’s been using an Air Fryer to bake it but you can always toss it into the oven. She also adds diced almonds but that’s entirely optional.
