I absolutely love panang curry. If you’ve never tried it, Panang curry is a mild, nutty curry which has the nutty, mellow flavor and texture of roasted peanuts ground right into the curry paste. Here, inspired by Panang curry, I used Whole30 ingredients to make a delicious weeknight dinner. If you aren’t a soup lover and you are annoyed with the amount of soups I post during the fall/winter. I apologize. But to be honest, I have so many more soup and stew ideas brewing in my head, I don’t see an end in sight. I am a soup lover, what can I say? It’s ironic that this is called a banh-mi bowl considering that “Banh-mi” is the vietnamese word for “bread”. Ha! But as an American, when I think of a banh-mi, I think of a delicious sandwich filled with all of the delicious flavors of Vietnam. Hello Thai food, we meet again. These Thai Red Curry Lettuce Cups are so tasty, easy and perfect for either a weeknight meal or even a fun appetizer when entertaining! For all of you Pho lovers that want a pho fix without all of the time that goes into it, here is a great way to get it…my pho in 15 minutes. Literally, this pho only takes 15 minutes to make and I love whipping this up when I have tons of fresh herbs leftover from one of my herby Thai recipes.  I always have bonafide provisions bone broth in my fridge/freezer at all times.
