Summer Breads
America's Grain Guy

I love bread.  When I was a child we ate bread and butter with every meal.  It was a staple. When we set the table we always had a plate of sliced bread and a dish of butter.  I have to confess we didn’t use butter, we used margarine,  we were poor and it was so affordable.  But that is another story. My mom made the best white bread ever.  We had it for sandwiches, toast, bread and milk, and just bread and butter.   It was so good.  I wonder if this generation today ever had the experience of bread and milk.   Just in case you have no idea, it was ..read more

Spring Cleaning/The Cleanse
America's Grain Guy

I am a believer in seasonal cleaning.   We go through changes in our bodes, homes, and gardens. Spring cleaning has been an item for centeries.   Years ago  in the spring, carpets were dragged out of the house after long cold winter months to be hung and beaten on the line.  All the buildup from indoor cooking fires and just being shut in made it esential to do a major Spring Cleaning.   Spring Cleaning also applies to your body.  Many don’t exercise as much and are not outdoors as much in the cold winter months and after all the major winter holidays, we need a ..read more

I recently had the opportunity of hosting one of my Culinary Coaching Events at my home and two of the guest were Jay and Karen Osmond.  I was delighted to get to know them.  I grew up with the Osmond’s music and have met Alan and his sweet wife Suzanne before.   It was a wonderful evening.  Jay asked if I would be willing to do a life FaceBook with him the next morning.  I felt honored and we had a wonderful time.  We enjoyed working together so much that we scheduled another one.  We decided to do Mother Osmond’s recipes.  Olive published a cookbook so ..read more

I love beverages. I would be a lush if I drank. That is if I drank alcoholic beverages. I love to drink fun beverages. I have never loved coffee, but I do love the smell of fresh brewed coffee. I grew up in a home where coffee was brewed everyday in a perkalator coffee maker. Those old fashioned electric coffee brewers. Oh the smell, it still brings back memories and feelings of being a little boy. I also grew up drinking lipton tea. Black tea. Green tea was unheard of back then. We drank lipton tea by the gallon and if was often brewed in the sun in a gallon jar. KInda like cold brewed coffe ..read more

Beverages stations can be a wonderful addition to any home. It can be a become a tool to gather and entertain others. It can be something to bring comfort on cold winter days and hot summer months. It can be healthy and delicious. It can be simple or extravagant. The first thing to consider is a place out of the way, but in the way. Meaning if it is to far out it won’t be of much use. It serves best when it is central to where you gather. The second thing to consider is the time of the year. Although in some places and in some cultures hot beverages are good anytime of the year. Taking that ..read more

Pumpkin Pie

I love a good pumpkin pie.  By good I don’t mean a commercially baked pie sold by the thousands.  I mean a good pie baked from scratch in your kitchen.   Using a fresh pumpkin right out of the garden or from the local farmers market.  Using fresh pumpkin totally changes the game when it comes to baking a great pumpkin pie.   Preparing fresh pumpkin is so easy to do.   The finished product can either be frozen or bottled for later use.  I prefer to bottle the puree and have it ready when ever I need pumpkin, for sweet breads, savory pumpkin bread, pancakes, wa ..read more

When I grew up we were really poor.   Not welfare poor but my parents struggled and we lived out of town.  Not close to a store and stores were all closed on Sunday’s.  Times have changed.    My mom made homemade bread every week.  So we had plenty of bread and she always made jams and jellies every year.   She covered them with wax.  No lids and rings, just wax.   I guess with all the sugar and wax covered over them it was ok.  I never remember a jar going bad.  But I didn’t like breaking through the thick coat of wax to get at the good u ..read more

I love Salsa.   I am from Arizona and love salsa’s.   Many of my friends are from Mexico or South America and over the years they have taught me many things about how different salsas can be and how creative one can be in making salsa,   from peanut salsa’s to hot firey salsas.  I love salsa.   I do have to confess that I am not fond of salsa that is so hot you can’t taste the flavors.  I really love hot, but I really enjoy heat that does not destory the suttle flavors of salsas.  I have eaten salsa so hot I thought I would die and on the other hand I have ea ..read more

Rediscover Sauerkraut

Some foods bring back so many memories.  When I was growing up we ate things like canned spinach, liver and onions, and sauerkraut.   And we all loved it.  It was part of life.  So many of the food we used to eat are making a comeback.  And Sauerkraut is one of them.   The big reason Sauerkraut is coming back into popularity is that we have learned just how good it is for the body.   It is packed with probiotics as most fermented foods are.  Fermented foods are really in right now and more and more of us are getting in tune with what our bodies really n ..read more
