Hiiii… wow has it really been that long between blog posts? Over 6 months! Anyway, I simply HAD to share this vegan Biscoff Butter Cookies recipe, as they are so good! I made this recipe three times in one week – that’s when you know it’s a good one! It’s easy to whip up and you’ll have amazing tasting cookies in no time. These ones are also gluten free, which is a bonus. I reckon you could sub out the GF flour for plain flour, but I haven’t tried it yet. I made these into thumbprint cookies and piped some biscoff creme cheese on top made by Compassion Creamery in Sydney – Sarah, the owner ..read more

Delightful Vegans

Halloween is starting to creep up again (hehe… geddit?), and I’ve got you sorted with these Spooktacular Shortbread Halloween Fingers. These Halloween fingers are sure to creep anyone out! I tried playing a joke on Josh and said that I hurt my finger, and he thought these were absolutely disgusting. He can’t even eat them, they’re that gross looking! That’s a win in my books lol! So, this is just a simple shortbread recipe, I have made it into a small batch, but you could double it to make more. This made 8 fingers but they did thicken while baking, so you could make them thinner and perhaps ..read more

Who loves the flavour of Tom Yum? If so you’ll love this Vegan version of a Tom Yum Fried Rice. It’s so flavourful!! This recipe is easy to make and like most of my recipes, you can adapt it and add different ingredients in it, with this one you could add carrot, corn, mushrooms, or broccoli – they would all work well in this recipe! I put pineapple in mine, but I know some people don’t love pineapple, so feel free to leave that out! We have made a YouTube video on how to make this recipe as well! Check it out below, and please Subscribe to our channel if you haven’t already! This recipe i ..read more

Tofu Scramble Pastry Recipe
Delightful Vegans

Guys! Want to level up your scrambled tofu? Try out this Tofu Scramble Pastry Recipe! You’ll be glad you did! It’s so crispy and flaky with the pastry, and then delicious with the tasty tofu on top! The thing I love about scrambled tofu is how versatile it is… you can use up leftover veg, or veggies that are going sad in the fridge. You can put in any herbs and spices you want! Its that easy! Three things I ALWAYS put in mine are black salt – which gives it that eggy type flavour; nutritional yeast, which gives it a cheesy flavour; and turmeric powder, which gives it a yellow colour. I also u ..read more

Lemon Pepper Roasted Macadamias
Delightful Vegans

Macadamias have to be one of my favourite nuts of all time! In my opinion they are best roasted, so these Lemon Pepper Roasted Macadamias are now one of my fave snacks!! These are so easy to make – literally takes a couple of minutes to throw together. The hardest part is waiting for them to cool down! I used Cobram Estate Lemon Infused Olive oil to give these an extra lemony taste – it worked really well. If you don’t have that, just use normal olive oil. I got gifted these Macadamias from Aus Macadamias – they’re so fresh and absolutely delicious!! There’s so many ways you could make this ..read more

Macadamias have to be one of the tastiest and most delicious nuts out there! How good are they roasted and salted? I’ve had macadamia slice before but I thought I’d have a go at making my own!! So here’s my White Chocolate Macadamia Slice. I got gifted these macadamias by Aus Macadamias, they are so fresh and delicious. They also gifted me some macadamia oil and macadamia butter. YUM! For the base I used a packet of biscuits, (cookies for anyone in the Northern hemisphere!) a pinch of salt and some vegan butter. I used digestives for this recipe, but you could use arrowroot biscuits, or even ..read more

Last weekend Josh and I had a little getaway on the Sunshine Coast, and on our way back to the Gold Coast, we visited Luva Berry Strawberry Farm! LuvaBerry is family run business by Mandy and Adrian Shultz, who have been growing and producing strawberries for 13 years. It is located about an hour north of Brisbane, so in between Brisbane and the Sunshine Coast. They also grow other types of herbs, such as rosemary, tarragon, chives and sage, and have a fairly substantial finger lime orchard. One of the best things to do at LuvaBerry is to pick your own fresh strawberries! Costing just $15 ..read more

Ok, seriously, you guys are going to want to make these! Who doesn’t love something that’s crispy, deep fried and just all round delicious! That’s the case with these Vegan Crumbed Cheese Balls! Firstly I used a specific cheese for this, it’s Fine Cultures Cashew Macadamia Camembert. It is pliable, so make sure you use a pliable cheese for this recipe. Some of Fine Cultures other cheese will work too, their Port Wine Cheddar that I used in my last gnocchi recipe, and their aged cheddar will work well. This recipe is so easy, it literally took me about 10 mins to make. Firstly, I rolled the c ..read more

Creamy Mushroom Gnocchi
Delightful Vegans

One thing I love about gnocchi is how quickly it takes to cook! It’s literally ready in a few minutes! So making this Creamy Mushroom Gnocchi is a quick and simple meal that’s ready in about 15 mins! Is there any better combo than creamy mushroom for pasta? It’s just a classic! As vegans it’s pretty easy to get that creamy consistency – we can use a plant based milk and thicken it up with vegan cheese or cornflour, or a coconut cream, or now there is even Flora Plant Cream which works really well in pasta dishes! First I fried the leeks in some olive oil. For this I used Cobram Estate Roaste ..read more

Strawberry Custard Tart
Delightful Vegans

This is such an epic dessert! The biscuity, almost shortbread-like base, the custard in the middle and the strawberry jelly on top, it all comes together perfectly to make this Strawberry Custard Tart. Have you guys ever used agar agar to make your own jelly before? It works so well!! You can get agar agar usually from specialty shops, or online. Last weekend Josh and I went to Luvaberry Strawberry farm. You can do strawberry picking there and we picked about 3 kilos of strawberries to take home. These strawberries are lush – they are the sweetest and tastiest strawberries I’ve tried. Even J ..read more
