Hey guys, I am an incoming freshman who has gotten admission into Purdue, UIUC, and UC Davis for food science. I am in a bit of a dilemma deciding which university to pick. If you have any information about any of the food science programs in any of the universities or why one program might be better than the others, I would greatly appreciate it if you could let me know

Hi y’all, information is so limited on this online so Reddit seems to be the way to go. Does anyone have a possible explanation as to how a person can be intolerant to only red bell peppers? This does not extend to any other color of bell pepper, just specially red ones (and also certain paprikas that are made from red bell pepper too). I just want to emphasize, it’s not an allergy. It also doesn’t seem to extend to other nightshades. It’s an intolerance akin to if someone lactose intolerant ate cream. Any thoughts or theories?

Anyone have experience/familiarity with this job? I ask because I'm pursuing a career in food science and am wondering if this would be a good QA starting point. I eventually want to shift into research & product development but hear that QA is good to start with in the industry in general. I'm in the process of getting my MS in food science, but this job doesn't require that or any other specific credentials. My wife made a fairly standard chicken stock this weekend, and we bottled it in mason jars that went into the freezer this morning (8am).
Just now, I went to take one out to thaw overnight, ~8pm, and noticed that while 7/8 jars were frozen solid, one was obviously still a liquid. I rocked it gently, and sure enough it moved within the jar as a liquid. Until it suddenly froze, forming a large ice crystal and even froze higher than the surface where the liquid had sloshed up the sides. I.e., it underwent classic superc ..read more

Hello, does anyone know where to get basic concentrated flavors for water enhancement? I am creating a pre workout powder and the only concentrated flavoring I can seem to find are oils meant for baking and creating candy. I do mind if it is artificially or natural, as long as it is very potent and have a good selection of flavors to choose from. Sorry if this is asked a lot or if this is better suited for the culinary subreddit.
